At City College of San Francisco, culinary students aren’t just learning recipes – they’re building entire gastronomic visions, one meticulously crafted dish at a time.
Blending heritage, one plate at a time
The Chef’s Table, the college’s working restaurant, is serving as a vital proving ground, offering students real-world experience and a chance to translate their diverse culinary influences into tangible restaurant concepts. Second-semester student Anthony Calvo, for instance, is meticulously crafting a menu that proudly marries the flavors of his Mexican and Salvadorian roots with the vibrant traditions of Peru and Japan.
“It’s about honoring where I come from, but also pushing boundaries,” Calvo explains. “My godparents in Peru have profoundly shaped my palate, introducing me to incredible peppers – they’re going to add a genuinely exceptional heat and depth to this dish.” He’s experimenting with incorporating these peppers into a reimagined Asian classic, a clear demonstration of his ambition.

Mentorship as a catalyst
Instructor and chef Malik Francis is fostering this entrepreneurial spirit, emphasizing leadership and a profound sense of ownership amongst the students. “We’re shifting the focus beyond technique,” Francis states. “We're dedicated to cultivating personal development, equipping them with the confidence to translate their passions into viable business opportunities.” He stresses the importance of taking ‘extreme ownership’ – a concept that clearly resonates with Calvo, who describes Francis as “one of the best teachers I’ve ever had.”
The program’s holistic approach – a blend of technical training and practical business acumen – is designed to nurture not just skilled chefs, but confident leaders. The Chef's Table isn't simply serving meals; it’s serving up a potent mix of ambition and honed expertise. And the results, like Calvo’s innovative fusion cuisine, are undeniably compelling.
